Japanese Wagyu comes from purebred Wagyu cattle raised in Japan. American Wagyu is typically a cross between Japanese Wagyu and Angus, producing excellent marbling that falls between USDA Prime and full-blood Japanese Wagyu. Both are premium, but Japanese Wagyu has higher marbling.

Butcher's cuts are lesser-known steaks from underutilized muscles like hanger, flat iron, skirt, and picanha. They were traditionally kept by the butcher for personal use because of their bold flavor. They often cost less than premium steaks but deliver exceptional taste when cooked properly.
