Ingredients
2 12oz pork belly
3 cloves garlic; minced
1 shallot; minced
1 teaspoon black pepper
3 tablespoons fish sauce
4 tablespoons sugar
1 1/2 cups coconut water
2 tablespoons sesame seeds
Instructions
1. Bring pork belly to room temperature*. Preheat oven to 275°F.
2. Combine the garlic, shallot, pepper, fish sauce, sugar and coconut water in a medium mixing bowl and stir until combined.
3. Place the pork in a roasting pan and pour in the marinade. Cover with foil and roast for 4 hours, occasionally basting.
4. After 4 hours, increase the heat to 400°F. Remove the foil, baste and continue to roast for another 20 minutes.
5. Remove the pork from the oven and let cool until able to handle. To serve, slice into 2-3 inch pieces and sprinkle with sesame seeds.
