What is Japanese A5 Wagyu?

Japanese Wagyu is a cattle breed from Japan, renowned for producing beef with exceptional marbling and flavor. The “A5” designation is the highest grade awarded to Wagyu beef and is determined by Japan’s strict grading standards.

  • Yield Grade (A, B, C): Indicates how much usable meat is taken from the carcass. “A” is the highest.
  • Quality Grade (1–5): Measures marbling, meat color, firmness, and fat quality. “5” is the best.

Together, “A5 grade” reflects both the highest yield and the highest quality. To achieve this grade, the beef must also score between 8–12 on the Beef Marbling Score (BMS) scale, showcasing the rich intramuscular fat that gives A5 Wagyu its signature buttery texture and umami flavor. This grading is primarily used for Japanese Wagyu beef, such as Matsusaka, Miyazaki, and Kobe beef.

From Japanese A5 Wagyu ribeye to tenderloin and filet, Allen Brothers offers only the finest cuts, sourced directly from Japan and authenticated for quality.
