Ingredients
4 8oz halibut fillets; thawed*; cut into 1-inch cubes
1 green bell pepper; cut into 1-inch pieces
1 orange or yellow bell pepper; cut into 1-inch pieces
2 lemons; cut into wedges
2 tablespoons olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Instructions
1. Preheat grill to medium-high.
2. Thread the ingredients onto the skewers, alternating between the fish, peppers and lemon. Drizzle the threaded skewers with olive oil and season with salt and pepper.
3. Place the skewers on the grill and cook for about 8 minutes, turning halfway through cooking. When the fish is cooked through, remove skewers from the grill and serve!
