4 8oz halibut fillets
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 shallots; diced
1/2 cup dry white wine
1 red bell pepper; diced
1 yellow bell pepper; diced
2 tablespoons capers
2 tablespoons freshly chopped parsley
2 tablespoons lime juice
3 tablespoons olive oil
1 pinch sugar
1 lime; cut into wedges for garnish
1. Preheat the oven to 400°F. Prepare a baking dish with parchment paper or cooking spray.
2. Rinse the halibut fillets, pat dry, season with salt and pepper. Sprinkle the shallots in the baking dish and place the halibut pieces on top. Add in the wine and cover with aluminum foil. Bake for 20 minutes or until fish is cooked through.
3. Meanwhile, add the peppers, capers, parsley, lime juice, olive oil and sugar to a medium mixing bowl. Toss until completely incorporated. Set aside until ready to serve.
4. Remove the fish from the oven, and transfer to individual serving plates. Top with the salsa, and garnish with the lime wedges.
