Ingredients

1 lb cooked lobster claw & knuckle meat

2 tbsp unsalted butter; melted, divided

salt

freshly ground black pepper

3 1/2 tbsp mayonnaise

1 1/2 tbsp sour cream

1 celery stalk; finely diced

1-2 tbsp fresh lemon juice

2 tbsp chives; snipped

4 white hot dog buns; split from the top

4 tbsp butter; softened

Instructions

1 Roughly chop meat and combine with mayonnaise, sour cream, celery, and enough lemon juice, salt, and pepper to taste, stirring thoroughly. Stir in chives.

2 Preheat a large skillet over a medium heat until hot. Generously spread insides and outsides of rolls with butter.

3 Toast rolls in skillet until a golden crust forms all over, turning from time to time.
