Ingredients

4 boneless duck breast fillets; skin on

Salt

Freshly ground pepper

2 tablespoons olive oil

3 tablespoons balsamic vinegar

2/3 cups dry red wine

2/3 cups chicken stock

1/4 cup brown sugar

2 sprigs fresh rosemary

1 3/4 cups fresh blackberries

1 1/2 tablespoons butter

Instructions

1. Rinse the duck under cold running water and pat dry with paper towels. Season with salt and pepper. Heat the oil in a large skillet over medium-high heat. Working in batches if necessary, brown the duck, skin side first, turn over, reduce heat and cook other side, about 10 to 15 minutes. Transfer the duck breasts to a platter, reserving the juices in the pan.

2. To make the sauce, add the balsamic vinegar and red wine to the pan with reserved juices and cook until reduced by half. Add the stock and reduce by half once again, add brown sugar, rosemary and blackberries and cook for 3 minutes. Strain into a bowl and whisk in the butter to finish. Slice the duck breasts and arrange on serving plates; and drizzle the berry sauce around the duck.
