For the Butter:
4 oz Butter (softened)
3.5 oz Dry aged tallow (softened)
6-8 Fresh garlic cloves, finely grated
1 tbs Fresh Chives, finely cut
1 tsp Fresh thyme, removed from stem and chopped
1 tbs Parsley, finely chopped
1 tp Kosher salt
1/2 tsp Ground black pepper
Dry Aged Beef Tallow

Combine all ingredients in a mixing bowl and whip to incorporate all ingredients consistently throughout.
When the steaks are cooked and rested, spread the softened tallow butter on the steaks and serve.
