2 mangos; peeled and diced
1 avocado; peeled and diced
3 tablespoons lime juice
1 red chili pepper; finely diced
1 tablespoon chives; chopped
3 teaspoons kosher salt; divided
4 salmon fillets
1 tablespoon olive oil
1 teaspoon sesame seeds
2 limes; halved
Sour cream; optional
Red pepper jelly; optional
1. Preheat oven to 400°F.
2. In a medium mixing bowl add the mango, avocado, lime juice, chili pepper, chives and 1 teaspoon of salt. Stir until completely combined; set aside.
3. Spray a sheet pan with cooking spray and arrange the salmon on the pan. Season the salmon with the remaining salt and drizzle with oil. Bake for 15 minutes or until the salmon is opaque and cooked through.
4. Remove pan from the oven and top with the mango salsa. Garnish with the sesame seeds and limes. If desired, serve with sour cream topped with red pepper jelly
