Australian Wagyu derived from prized Japanese Wagyu. Born wild on the northern Australian rangelands, these cattle roam free in family groups, grazing native grasses for at least two years. They continue to grow and mature in spacious pens where they are fed a bespoke grain diet, much of which is grown on farm - allowing the terroir of the land to shine through.

Our favorite accompaniment for burgers, or for a beefy twist on a classic BLT. Cured 7 days, then smoked over hickory and Applewood for a balanced smokiness.
