Osso buco is a classic Italian braised dish made with cross-cut veal shanks slow-cooked in white wine, broth, and aromatics until fall-off-the-bone tender. The name means "bone with a hole," referring to the marrow that melts into the sauce. Traditionally served with gremolata and risotto.

Milk-fed veal comes from young calves raised on a milk-based diet, producing pale pink meat that is exceptionally tender and mild. Allen Brothers sources milk-fed Dutch veal, known for strict animal welfare standards.

Veal shanks are smaller, more tender, milder, and cook faster (2 to 2.5 hours vs 3+ for beef). Beef shanks are larger with deeper, more robust flavor. Both are ideal for braising.

Plan one shank per person as a main. Each Allen Brothers order contains two packages with two shanks each (four total), serving approximately four guests.
