Lollipop lamb chops are individual rib chops cut from a rack of lamb that has been frenched, meaning the bone is cleaned and trimmed so the meat sits at the end like a lollipop. This makes them easy to pick up and eat by hand.

Lamb lollipops are a type of lamb chop. The difference is the butchering: lollipops are frenched (bone fully exposed and cleaned), making them smaller, more refined, and easier to eat with your hands. Standard chops may be thicker with more fat around the bone.

Allen Brothers lollipop chops are sourced from Australian lamb, which tends to be milder and less gamey. The rib cut is naturally tender and mild. Most people hesitant about lamb find lollipop chops to be an approachable starting point.
