Duroc is a heritage breed with significantly more intramuscular marbling than standard commercial pork. This means juicier, more tender, more flavorful chops with a deeper reddish-pink color compared to pale conventional grocery store pork.

Both are premium heritage breeds. Duroc is known for high marbling and rich, sweet flavor. Berkshire has finer grain and more delicate taste. Preference is personal. Allen Brothers sources Duroc from Vande Rose Farms for consistent quality.

Sourced from Vande Rose Farms, where pigs are raised crate-free on small family farms in the USA. Fed a vegetarian diet with no antibiotics ever and no added hormones.

Cook to 145F internal, then rest 5 minutes. The USDA confirms pork is safe at this temperature, resulting in slightly pink, juicy meat. Overcooking to 160F will dry out even well-marbled Duroc.
