Bone marrow has a rich, buttery, slightly savory flavor often compared to beef-flavored butter. It has a smooth, creamy texture when roasted and is commonly served on toasted bread with flaky sea salt.

Bone marrow is nutrient-dense, containing collagen, healthy fats, and minerals like iron and phosphorus. It has been consumed across cultures for centuries and is valued as a whole-food source of collagen and fat-soluble vitamins.

Presplit means the bones have been cut lengthwise by the butcher, exposing the marrow inside. This saves you the difficult step of splitting them at home and makes them ready to season and roast right out of the package.

Preheat oven to 450F. Place presplit bones cut-side up on a sheet pan and roast 15 to 20 minutes until marrow is soft and slightly golden. Season with flaky salt and serve with crusty toasted bread.

Lack of Communication

"Dear Allen Brothers Team, I’ve never had an issue with your company in the past—in fact, I’ve always appreciated the quality of your products. However, I’m very disappointed by the lack of response to the emails and voice messages I’ve left regarding a recent order. This is the first time I’ve experienced a problem, and unfortunately, the bones arrived quite warm. Since they were intended for a baby, we couldn’t take the risk of using them in that condition. I reached out to request a replacement—ideally packed with ice or another method to ensure safe delivery—but have yet to receive any reply. I was surprised by the silence, as this doesn’t align with the standard I’ve come to expect from your company. I hope to hear from someone soon regarding how this can be resolved."

I prefer Allen Brother's tenderloin. . .

"Well there has been a lot of clamor about consuming bone marrow. I recall using soup bones as a child and the marrow became part of the soup for the most part. I never consumed them on their own per se until now. I definitely was underwhelmed and will not attempt this gustatory experiment again. I prefer your tenderloin, especially the bone-in variety. It is truly hard to beat."
