Ingredients
For the butter
1/2 cup unsalted butter; softened
2 cloves garlic; peeled and minced
1 tablespoon fresh rosemary; trimmed and chopped, with additional
garnish sprigs (if desired)
1 tablespoon fresh tarragon; trimmed and chopped
1 tablespoon fresh flat-leaf parsley; trimmed and chopped
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
For the steaks
3 tablespoons neutral high heat oil
2 ribeye steaks; approx. 12oz. each
1/2 teaspoon flaked sea salt
1/4 teaspoon freshly ground black pepper

Instructions
1. In a small bowl combine butter, garlic, rosemary, tarragon, and parsley. Add a dash each of salt and
pepper. Cover and chill until needed.
2. Fill a large saucepan about half full with water, add a vegetable steaming basket, and bring to a boil.
3. Meanwhile, preheat the grill to medium-high heat. Rub steaks with oil on both sides and season with sea salt and pepper.
4. Once hot, carefully lay steaks onto grill. Leave to cook, undisturbed, until a golden brown crust forms underneath, about 5 minutes.
5. Flip steaks and cook for another 4-5 minutes. Remove to a platter, add a large dollop of prepared herb butter, and cover loosely with aluminum foil allowing steaks to rest.
6. To serve: cut the steak into slices, across the grain. Serve from a platter with vegetables on the
side. Add rosemary sprigs as a garnish.
