Ingredients
2 tablespoons extra virgin olive oil
8 lamb loin chops; trimmed
1 large potato; thinly sliced
1 red onion; peeled and cut into wedges
1 tablespoon fresh thyme leaves
1/4 cup chicken stock
1 red bell pepper; trimmed and sliced
1 yellow pepper; trimmed and sliced
1 lemon; cut into wedges
2 cloves garlic; peeled and sliced
1 teaspoon kosher salt
1/2 teaspoon black pepper
¾ lb. cherry tomatoes; on the vine, cut into clusters
1/3 cup pitted kalamata olives
2 ounces feta; crumbled
sprigs fresh thyme; for serving
Instructions
1. Preheat oven to 400°F.
2. Add the oil to a large skillet over high heat. Sear the lamb for about 2 minutes on each side. Remove from heat, cover with foil and set aside.
3. Add potato, onion, thyme and stock to a large sheet pan and stir. Transfer to oven and bake for 15 minutes or until the onion is almost tender.
4. Remove the pan from the oven and add the peppers, lemon wedges and garlic. Stir gently to combine. Season with salt and pepper. Top with tomatoes. Return to the oven and continue to bake for another 15 minutes or until vegetables are almost tender.
5. Remove the pan from the oven and arrange the seared lamb chops on top. Sprinkle with olives and feta. Bake for another 10 minutes or until lamb is just cooked through and vegetables are tender and beginning to char. Sprinkle with thyme sprigs and serve.
