A5 Japanese Snow-Aged Wagyu Tenderloin Medallions

Preparation

Thaw completely in the refrigerator.

Pat dry with paper towels.

Season lightly with kosher salt just before cooking. Fresh cracked pepper can be added after cooking to prevent scorching.

Preheat a cast iron or stainless steel skillet over medium-high heat. Very little oil is needed, as the Wagyu will render its own fat.

Pan Sear (Recommended)

  1. Place the medallions in a hot skillet.
  2. Sear for 1½–2 minutes per side, depending on thickness.
  3. Sear the edges for 15–30 seconds if desired.
  4. Remove from the pan and rest for 3–5 minutes before serving.

For Best Results

Serving Tips

  • Slice into bite-sized pieces and serve immediately while warm.
  • Finish with flaky sea salt.
