All of Allen Brothers USDA Prime Rib Roasts are hand-cut by highly skilled butchers applying the same artisanal standards pioneered by the neighborhood butcher. They are then carefully wet-aged to perfection, where enzymes break down the meat’s complex proteins from the inside out, producing meat that is supremely tender, sweet and juicy. You can rest assured that each roast is the very best as our roots are in the prime market where only the top 2% of all beef can earn the coveted USDA Prime rating, but we then take the additional step of hand selecting the highest possible grade of the very best grain fed, pasture raised superior breeds.
