Our french cut USDA Prime Cowgirl Ribeye offers an equally beautiful and elegant, yet smaller, presentation than the larger Cowboy cut. This is the eye of the ribeye only as the Cap (spinalis) has been removed. These center-cut bone-in ribeyes are thick-cut, with the added flavor that comes from the bone. Enjoy the supremely tender texture and rich flavor that the USDA Prime marbling and our wet-aging provides. All of our steaks are hand-cut in-house by our own artisan butchers.
