The process begins with hand selection of the highest possible grade of grain fed, pasture raised superior beef which is then meticulously wet-aged in vacuum-sealed bags under controlled conditions, preventing moisture from evaporating. It is during this process that enzymes break down the meat’s complex proteins from the inside out, producing meat that is even more tender, sweet and juicy, and then hand-cut by our artisan butchers. Each steak is individually shrink-wrapped and flash frozen to lock in all the natural juices and flavor, then packed in an attractive gift box with enough dry ice to ensure safe delivery. Finally, the container is placed in a heavy-duty corrugated box for an additional layer of protection to ensure that every product is delivered in wholesome condition when it arrives on your doorstep.
