Our butchers French trim these chops, scraping away the meat nearest the ends of of the rib bones, creating a more elegant presentation. Australian lamb chops are typically smaller than domestic and have a distinct richness balanced with a sweet, grassy flavor profile. Simple to prepare with a bit of olive oil, garlic and rosemary, then pan seared, broiled or grilled to no more than medium-rare perfection.
