Ingredients

4 pound Allen Brothers Prime brisket

1 tablespoon kosher salt

2 teaspoons freshly ground black pepper

2 tablespoons olive oil

1 large onions; sliced

3 stalks celery; sliced

6 cloves garlic; chopped

1/2 cup balsamic vinegar

2 cups beef stock

1/2 cup brandy

8 ounces cranberry jelly; plus additional for garnish (store bought or homemade)

4 fresh bay leaves; plus additional for garnish

4 sprigs thyme

Instructions

1. Preheat oven to 325°F.

2. Bring meat to room temperature*. Season the brisket with salt and pepper. Heat the oil in a large Dutch-oven over high heat. Place the brisket into the Dutch-oven and sear on all sides. Remove the browned brisket and set aside.

3. Reduce heat to medium and add the onions and celery and sauté until beginning to soften, about 5 minutes. Add the garlic, stir and continue to cook for another minute.

4. Add the balsamic vinegar and let reduce a bit, about 2 minutes. Stir in the stock, brandy, cranberry jelly, bay leaves and thyme.

5. Carefully return the meat back to the Dutch-oven, cover and place in the oven for about 2 hours.

6. Remove the lid and cook for another hour until meat is tender and can be pulled apart using two forks.

7. Garnish with additional bay leaves and cranberry jelly to serve.
