Instructions
1. Bring meat to room temperature*. Preheat oven to 275°F and place rack in upper-middle position. Trim the fat cap of brisket so there’s just a thin, even layer.
2. Combine the onion powder, garlic powder, sugar, mustard powder, chili powder, and salt in a small bowl. Rub evenly over the entire surface of the meat.
3. Place the roast in a 9x13 baking dish, fat side down and cover with aluminum foil. Bake for about 4 hours, until easily pierced with a fork.
4. Remove roast from the oven and turn over. Re-cover with foil and return to oven. Turn oven off and let roast rest in the warm oven for approximately 1 hour.
5. Remove the roast and brush with barbecue sauce. Turn oven on to broil and return roast. Broil until top is lightly charred and fat is crisp, about 5 minutes.
6. Transfer to a cutting board, let rest for 5 minutes, then slice against the grain into ¼ inch thick slices.
