DIRECTIONS
1. Pat dry the tenderloin and rub with olive oil and then sprinkle with salt, pepper and 2 minced garlic cloves.
2. Preheat the oven to 425°F.
3. Heat an oven-proof skillet over medium-high heat, add 2 tablespoons vegetable oil and sear the pork loin on all sides for 3-5 minutes until browned. Transfer to the oven and roast for 12-15 minutes until the meat registers 145°F internally.
4. Let rest for 5 minutes, slice and serve.
