1. Preheat oven to 375°F.
2. Brush the inside and outside of the roast with olive oil, then season generously with salt, pepper and garlic. Place the roast on a roasting rack or in a heavy roasting pan. Roast in center of oven until internal temperature reaches 150°F, about 1.5-2 hours.
3. Allow to rest 10-15 minutes. Internal temperature should rise to 160°F while resting.
