This uncommon cut is a real treat for steak connoisseurs, a quick cooking steak goes well with an English pea and mint side. Use frozen peas if you can’t find fresh.

Ingredients

4 8oz Allen Brothers hanger steaks

2 teaspoons kosher salt; or to taste

1 teaspoon black pepper; or to taste

2 tablespoons grapeseed oil

1 tablespoon Worcestershire sauce

Instructions

1. Bring hanger steak to room temperature*. Place an oven rack at the top of the oven. Preheat oven to broil at 500°F.

2. Season steak generously with salt and pepper. Place on a rimmed baking sheet and drizzle with grapeseed oil and Worcestershire sauce.

3. Broil for about 5 minutes on each side, or until desired doneness. Let rest on a platter or cutting board, covered with aluminum foil, for 5 minutes before slicing.
