Red Fish with Cajun Rub

8-12 OUNCE NATURAL FIlETS

Thaw* product on a dish in the refrigerator.


CAJUN RUB

½ cup coarse salt
¼ cup paprika
3 tablespoons black pepper
1 tablespoon cayenne pepper
1 teaspoon onion powder
1 tablespoon garlic powder
1 teaspoon ground bay leaf
1 tablespoon ground thyme


INSTRUCTIONS

  1. Make Cajun rub: combine all ingredients in ashallow dish and mix thoroughly.
  2. Pat fish dry with paper towel, cut filets in half tobetter fit in skillet.
  3. Dredge each filet in Cajun rub.
  4. Heat 2 tablespoons olive oil until hot, but notsmoking. Sauté fish 2-3 minutes per side.
  5. 5. Serve immediately.
