USDA Grade Beef

USDA beef grades were created by the U.S. Department of Agriculture as a way of informing consumers of the overall quality of a cut of beef. All American beef for sale must be inspected and graded by the USDA. At the top of the scale is the USDA Prime rating. This is followed by USDA Choice and then USDA Select and USDA Standard grades.

The Prime rating is only given to less than two percent of all American beef. A cut of beef earns the Prime rating due to a variety of factors, not the least of which is a dense marbling of white fat that runs through the meat. This marbling makes the meat more tender, juicy and flavorful. In terms of steaks, the more marbling one has, the better it will taste. Thus, USDA Prime beef steaks are the best steaks available anywhere.
