Herb-Crusted Tenderloin Tails
6 5-ounce Allen Brothers Tenderloin Tails, thawed
3 tablespoons olive oil
2 cloves garlic, minced
¾ cup of mixed fresh herbs: basil, chives, parsley, and rosemary
salt and pepper, to taste
1. Preheat oven to 400°F.
2. Lightly brush tails with olive oil, season with salt and pepper, then roll in fresh herbs and garlic.
3. Place on a baking sheet and roast 8 to 10 minutes for medium-rare or to desired level of doneness.
4. Let rest 5 minutes and serve hot, or let cool and slice for steak salad.
Serves 4 to 6.
