Lamb Crown Roast

1. Thaw packaged roast and stuffing on a dish in the refrigerator.
2. Preheat oven to 350° to 375° F.
3. Lightly brush rack with olive oil and season with salt, pepper, and garlic.
4. Place in the oven in a roasting rack or pan.
5. Spread out stuffing in a baking dish so that it is 1½ inches high. Set aside.
6. When the roast reaches an internal temperature of 115° to 120° F, after 30 to 40 minutes, place stuffing in the oven with the meat and continue to roast.
7. For medium-rare, remove when the internal temperature reaches 135° F, after about 55 minutes. When the stuffing reaches an internal temperature of 145° F, remove from oven. (This may occur at different times.)
8. Place stuffing in the center of the roast, fluffing as needed before serving.

One 3 to 3½-pound roast serves 4 to 6.
