Lamb Rib Chops

Cut from full rack of lamb, lamb rib chops offer a magnificent way to savor lamb. The chops always contain a backbone, and with enough thickness, a rib bone (or sometimes two) as well. The rib-eye muscle makes up a succulent, meaty portion of the chop, which is often considered the most flavorful portion of a lamb. When cooked properly, a rib chop holds its juices quite well.

Different cuts of lamb produce different presentations. Traditional cuts produce plenty of tender lamb meat, while thicker cuts often have a double bone. A French cut (simply referred to as Frenched) removes the meat from the tip of the chop, exposing the rib bone. Finally, single-bone, lollipop-style chops make the perfect appetizers with just a couple bites of meat and a built-in handle with the bone.
