As scrumptious as it is elegant, this roast starts with a well-trimmed three-pound beef tenderloin. Our master butchers then cut a pocket in the center and add a delicious stuffing. Made from risotto, pancetta, prosciutto, mushrooms, onion, garlic, sun-dried tomatoes, fresh herbs and three kinds of cheese, the stuffing would practically be a meal in itself! When combined with our first-rate beef, it's a rare treat. Ready to cook. Serves 6-8.
