Our butchers here at Allen Brothers create a beautiful crown roast from two racks of lamb. They use only the highest quality domestic lamb for the 16-bone lamb roast. Ribs are Frenched by hand to expose the bone for a more dramatic presentation. To keep the bones from burning during cooking, you can cover them with tinfoil. Tied together, the two racks adjoin to form a perfect circle, giving it that crown-like appearance from which its name is derived.
