Buffalo Tenderloin Filets Roasted with Gorgonzola Butter
4 Allen Brothers Buffalo Tenderloin Filets, thawed.
2 teaspoons olive oil
salt and pepper, to taste
Gorgonzola Butter
½ cup Gorgonzola cheese, softened
¼ cup unsalted butter, softened
¼ teaspoon Tabasco® sauce
1. In a small bowl, cream together cheese, butter, and Tabasco® sauce until smooth. On a sheet of plastic, form butter into a log about 4 inches long. Wrap in wax paper or plastic wrap and chill until firm, at least 1 hour (it can be made up to 1 week in advance).
2. Preheat oven to 450° F.
3. Lightly brush filets with olive oil and season with salt and pepper or your favorite herb.
4. In a large skillet, heat 2 teaspoons of olive oil until almost smoking.
5. Sear filet 1 minute per side and then roast in the oven 5 to 9 minutes or to desired internal temperature.
6. Slice gorgonzola butter and serve on steaks.
Serves 4.
Buffalo Sirloin Strip Steaks
1. Thaw packaged steaks on a dish in the refrigerator.
2. Preheat oven to 375° F.
3. Heat 1 teaspoon of olive oil in a large skillet. Add steaks and season with salt and pepper or your favorite herb.
4. Sear 1½ minutes per side, then transfer to an oven-safe pan and roast 3 to 4 minutes.
5. Turn and roast 3 to 4 minutes more or to desired internal temperature.
We recommend cooking steaks at 350° to 400° F. Use a meat thermometer and cook to desired internal temperature. Because meat continues to cook after it is removed from heat, remove 5° F before desired internal temperature.
