Soup’s On! In Praise of Potent Potages

Healthy and hearty Genoa Style Minestrone

Think of blustery fall afternoons, with crisp fallen leaves underfoot and biting wind chafing one’s cheeks and the mind, as well as the stomach, almost immediately turns to hot soup. Has there ever been a comfort food so welcome and embracing when the temperatures drop and the soul requires both warmth and nourishment? The quintessential American food may well be apple pie, but a hearty potage is right up there with it as far as we’re concerned. Which is why Allen Brothers offers a vast assortment of rich soups chock full of meat, seafood, vegetables, legumes and a litany of spices both familiar and exotic. In short, we have a soup to suit every palate, with enough variety to get through an entire week without having the same meal twice.

A tasty soup from Mexico called Chicken Posole. Ole!

Whether you choose one of our great soups as a dinner starter or add a chunk of crusty bread and make it a single meal, you’ll find them to be delicious, satisfying and easy to prepare. And while we offer classics such as clam chowder and matzo ball, there are new, international soups on our menu that we truly love. A case in point is our new GENOA STYLE MINESTRONE, often considered Italy’s signature soup. Brimming with hearty vegetables, the tasty broth is made even more memorable with the addition of basil pesto. Now that’s Italian. We recommend adding a shower of Parmigiano Reggiano and a drizzle of extra virgin olive oil to make it even better.

Tasty tenderloin beef barley, the ultimate comfort soup.

Even newer is our CHICKEN POSOLE, a Mexican favorite not often seen stateside. This flavorful chicken soup is lush with shredded chicken and posole (whole kernels of corn hominy) and brightened with garlic and cumin spice. Caramba, this is as satisfying as soup gets.

Succulent seafood swimming in a saffron laced broth.

For those extra cold autumn days and evenings, nothing compares with a bracing bowl of TENDERLOIN BEEF BARLEY, especially our version, made with tender and tasty tenderloin tips–anything but standard, porcini mushrooms, barley and lentils. Deep. Dark. Delicious. It’s the real deal. And if it’s seaward you lean in the fall months, we bring you the best of all fish-filled potages with our traditional, south of France inspired BOUILLABAISSE. Here’s a bowlful of tomato-saffron seafood broth overloaded with red snapper, sweet sea scallops, tender mussels, jumbo shrimp and potatoes, then accented with white wine and spices. Excuse our French, but ces’t magnifique!

For those dear readers and Allen Brothers aficionados who live in the South, the sun belt or the west coast, we would remind you that blistery afternoons and cold rainy evenings are hardly a requisite for enjoying great soup. After all, when it comes to enjoying true comfort food, the focus should be on flavor, not plummeting temperatures. Then again, you could always turn up your air-conditioner, don a pair of mittens, and pretend.
