BBQ Pork Shoulder

As one of the mainstays of BBQ, pork shoulder can be served in many ways. You'll sometimes find it served as a full entree, on a plate, with some great BBQ sides. More often, you'll be served pulled pork on a bun for the perfect BBQ sandwich.

A great debate exists over which part of the hog should be used for making pork. Well, when it comes to BBQ, the choice seems clear--pork shoulder. The pork shoulder is actually the entire front leg and shoulder of the hog, usually divided into two cuts, the butt and the picnic (yes, the butt comes from the front shoulder). The pork shoulder is then smoked until the meat is tender and juicy, with the slow cooking creating a sweetness.

Once smoked, the meat is pulled from the pork shoulder and, hopefully, used on a delicious BBQ-pulled pork sandwich.
