Tenderloin Tips Stir-Fry

2 1-pound packages of our Tenderloin Tips, thawed.

Marinade
½ cup soy sauce
½ cup brown sugar
¼ cup sesame oil
2 cloves garlic, minced
1 tablespoon fresh gingerroot, peeled and grated
2 tablespoons rice wine vinegar

Vegetables
1 cup pea pods
1 cup mushrooms, sliced
½ cup scallions, sliced
½ cup red pepper, sliced
3 tablespoons sesame oil

1. Mix together marinade ingredients. Marinate beef 1 to 2 hours in refrigerator.
2. Saute vegetables quickly in sesame oil on medium-high. Transfer to a platter when seared but not limp.
3. Saute tenderloin tips. When desired doneness is reached, place them over the vegetables.
4. Add remaining marinade to the heated saute pan and boil 2 to 3 minutes.
5. Pour over beef and vegetables.

Serves 4 to 6.

The USDA recommends cooking to a minimum internal temperature of 160° F. Use a meat thermometer and check temperature in the center of the meat.
